Yokai = Japan; Yaoguai = China; not sure what the Korean is…I’ll need to figure that out.
Yogoe = Korea
But this seems to be an obscure term there.

I remember that shot from Shang Chi.
So Kitsune means Japan, or the fox spirt/demon/whatever it is? I remember a menu item called Kitsune Udon. If it means Japan, then that's like saying American Hamburger.

No, no. Kitsune (and Kumiho and Hulijing) means nine-tailed fox, which was what was buried under the Sessho-seki.
Kitsune literally means fox. Kitsune Udon stock was traditionally made of fox tails. Now they use faux fox tails, made from fish I think, kinda like the fake crab in sushi.
just kidding. Kitsune like Kitsune Udon, which is why they call it that. At least, that's what I've been told. It's kinda like cat rice, which is not made from cats. see

Well it's tasty anyway. Although the curry udon at Gombei is also very tasty. I haven't been there in a long time.
