I like Mary Roach's work a lot. I'll definitely add this one to the list.
In the Tudor Period, Fencing Masters were classified in the Vagrancy Laws along with Actors, Gypsys, Vagabonds, Sturdy Rogues, and the owners of performing bears.

Sometimes you can see several of the Muybridge motion studies at the Cantor Center at Stanford, but I haven't been in a while so I'm not sure if any are on view now. There used to be a little room devoted to that.

Stanford backstabbed Muybridge in the end. He published a book with a different scientist that appropriated Muybridge but didn't give Muybridge credit. It called into question Muybridge's pioneering work.

I'll just mention watching Eadweard Muybridge, Zoopraxographer: The Life and Work of the Photographer and Cinema Pioneer.
It's decent, though not outstanding, available on Kanopy, if you're interested in a film documentary.

Oddly, there is another Muybridge documentary out there that was just completed and on the festival circuit called "Exposing Muybridge"
I'm still amazed that Muybridge killed his wife's lover and was acquitted of the crime. The 12 married men on the journey figured they would have done the same if they found their wife had a lover.
